Southwest “Fried” Quinoa

14 Jan

I loved this high protein, vegetarian dinner!

  • 1/2 C cooked Quinoa
  • 1 small onion (or 1/2 large), chopped
  • 1/2 clove minced garlic
  • 1/3 C frozen corn
  • Mixed fresh or frozen chopped red pepper, broccoli, mushroom
  • 1 egg
  • Adobo seasoning, to taste
  • Cumin, to taste
  • shredded cheddar cheese, optional for topping
  • salsa, optional for topping

Add onion to pan sprayed with Pam. Cook until starting to soften and then add garlic. Saute about 1 minute until fragrant and add frozen veggies. Cover with lid and cook for about 3 minutes. Add quinoa and seasoning to taste, and cover. After about 4 minutes, make a space in the center of the pan, spray with Pam, and crack egg. Scramble with spoon or spatula. Scramble in center until about half-way cooked and then combine with the rest of the quinoa mixture. Remove from heat, sprinkle cheese, salsa, and pepper to taste.

Enjoy! I didn’t include a picture because I’m sure that would have actually discourage the making of this recipe 🙂 Let’s just say my talent does NOT lie in food photography!

Last night I made these brownies! I’d been planning on it for a while and finally got around to it. I got the idea to make a batch of brownies and then freeze them individually for later from this Gina post! I can’t wait to take one out, pop it in the microwave and have a delicious dessert whenever I want! I’ve been sharing the secret with anyone who will listen 🙂

What else… oh yes, snow day yesterday!!

Long Day

6 Jan

Yesterday was such a LONG day… but good! It’s funny how a “long” day is almost always associated with a “bad” day!

I was super productive in the morning and went to the bank, got drug tested (for new job), changed coins into paper cash at another bank, visited Auntie Mary, and went to A&P to do my first round of back-to-school grocery shopping all before lunch!

The visit with Auntie was short and really weird… She kept thinking I was Kiera because she couldn’t “see” me in my expressions and appearance? Odd. Oh well, at least the visit was pretty short because she wanted to me leave! I’m not sure why, but the flu is going around the assisted living home so I was happy to get out of there ASAP!

I had lunch with Mrs. Barber, Sean and Kait at Pazzo in Red Bank. It was very nice inside! I had the “make your own salad”. Which was really good but pretty over-priced. ($14 plus an extra $6 for grilled shrimp!). It was nice but I’m not sure why we didn’t just have lunch together at home and save the money!

After that, my Mom and I went on a monster grocery shopping trip! At Target we got all kinds of dry goods for the house and me (like cereal, nuts, almond milk, granola bars, and paper goods). Then it was off to Costco, where I got lots of other fun goodies 🙂 I even got a really awesome set of 3 Contigo water bottles for $16! What a deal.

After all of that, I really didn’t feel like working out…. so I didn’t! I was sore and just wanted to lounge and have dinner. I’m glad I made that choice. I’m sure I would have been fine, but listening to my body was just more important. After a dinner of baked brie, roasted brussel sprouts, and grapes (plus a mini-weinie or two…) I was determined to make some cookies for my little sister!

Kiera has been wanted Carr’s Ginger Lemon Cremes to have with tea for a week or two. My Mom looked everywhere but couldn’t find them! So, I decided to make them myself!

I used this recipe, and although they were not as ginger-y because of the missing crystallized ginger, they got rave reviews from the peanut gallery family 🙂

And as if that was not a full enough day, I watched Modern Family with Kiera and Mom, and then “Easy A” with Sean and Jill! Phew. The movie was really cute 🙂

Overall a great, packed day!

Be back later with more action!

A New Year

2 Jan

I’m not sure what it is, but I can’t seem to stay dedicated to this blog!! I ALWAYS think about things I should post about and remember but somehow, it just doesn’t make it to the computer…

I think there are a few reasons for this:

1. I love to read other blogs and “waste” so much of my free time doing so. I’m always running out of time!!

2. It sometimes feels like work to write a post- I feel the need to write creatively and/or post pictures! The simple answer to this dilemma is simply to stop blogging. The problem is, I really love having the documentation and space to share my thoughts. I think I just need to make it less of a “big deal” to post something. I just need to write and not stress about how good it is… story of my life!

Just like I tell my clients- they key to success in fitness is consistency. I’m going to go ahead and claim that it’s going to be the same in blogging.

A lot has happened in the past month that I haven’t captured so here are a few of my favorite pictures from the end of 2010!
